Chili Prawns with Spaghetti

Chili Prawns with Spaghetti

Ingredients:

  • 250g spaghetti

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 red chili, finely chopped

  • 250g cherry tomatoes, halved

  • 500g raw prawns, peeled and deveined

  • 1 lemon, zest and juice

  • Salt and pepper to taste

  • Fresh parsley, chopped

Instructions:

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a large pan, heat olive oil over medium-high heat. Add garlic and chili and cook for 1-2 minutes until fragrant.

  3. Add the cherry tomatoes to the pan and cook for 2-3 minutes until they start to soften.

  4. Add the prawns to the pan and cook for 3-4 minutes until they turn pink and are cooked through.

  5. Add the cooked spaghetti to the pan and toss with the prawns and tomato mixture.

  6. Add lemon zest and juice to the pan and season with salt and pepper to taste.

  7. Garnish with fresh parsley and serve immediately.
