A Simple Fish Stew

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 red bell pepper, chopped

  • 1 can diced tomatoes

  • 2 cups fish or vegetable stock

  • 1 tsp paprika

  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • 500g firm white fish, cut into chunks (such as cod, haddock or halibut)

  • Fresh parsley or cilantro, chopped (optional)

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add onion and garlic and cook for 2-3 minutes until softened.

  2. Add red bell pepper to the pot and cook for an additional 2-3 minutes until it begins to soften.

  3. Pour in the can of diced tomatoes, along with the fish or vegetable stock, paprika, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10-15 minutes.

  4. Add the chunks of fish to the pot and cook for an additional 5-7 minutes until the fish is cooked through and flakes easily with a fork.

  5. Remove the bay leaf and discard. Taste the stew and adjust seasoning as needed.

  6. Serve the fish stew hot, garnished with fresh parsley or cilantro, if desired.

This simple fish stew is perfect for a comforting dinner, particularly on a cold day. It's easy to customize by using your favorite type of white fish and adjusting the seasoning to your preference.
